Processing Method: Strain Cultivation + Peach Juice + Fermentation in Sealed Barrel
1. First, use a machine to separate coffee cherries by density, conduct a sugar content test to distinguish different qualities, select coffee cherries that meet the fermentation requirements, and then remove the peel.
2. Put the cultivated strains activated with propionic acid and these peeled coffee cherries with pectin into a sealed barrel together for anaerobic fermentation.
3. During the mixed fermentation process, add fresh peach puree to meet the nutritional needs during fermentation.
4. After fermentation is completed, place the coffee beans on a drying bed for 15 to 20 days of drying treatment, and finally pack them into bags and let them stand for 30 days.
